Safe Storage; Ensure your Temperatures are keeping your Food Items Safe

Storing refrigerated or frozen food and drink needs to be done correctly and with care. Failure to keep items at the required temperature can lead to compromises in the safety of stock and therefore the safety of your customers. All storage equipment should be regularly maintained and serviced to ensure that the optimum temperature is consistently achieved. The Food Standards Agency issues a general guideline regarding safe storage temperatures for different food and drink items. This can be used as a guide; however all produce should be treated individually.

Frozen Food @ -18°C/-22°C

All frozen food products must be kept between -18°/-22°C

Fresh Fish @ -1°C/+1°C

This is the advised temperature for the storage of fresh fish. Please note that specific refrigerators must be used for fresh fish storage and fresh fish display.

Fresh Meat @ -2°C/+2°C

This is the advised temperature for the storage of fresh meat products.

Dairy Products @ +1°C/+4°C

Including milk, cheeses and other dairy products.

Pre-Chilled Food / Beer & Bottled Drinks@ +1°C/+9°C

No specified or recommended temperature for bottled drinks and beers, but most of your customers would prefer a cold pint over a warm one!

White Wine Serving Temperature @ +4°C/+9°C

No specific temperature for the serving of white wine but the general recommendation is +4°C/+9°C. See our wine display chillers or our upright display chillers for more details.

Red Wine Serving Temperature @ +12°C/+17°C

No specific temperature for the serving of red wine but the general recommendation is +12°C/+17°C.
