Designed to pull pre-cooked foods down through the food danger zone within the specified time frame to minimise the growth and multiplication of bacteria, Gram blast chiller freezers excel. When using the Gram blast chiller function, core temperatures are pulled down from 90°C to 3°C in 90 minutes - that's from 20° hotter than many other models on the market, which specify temperatures from 70°C. Gram blast freezers are capable of reducing core temperatures from 90°C to -18°C in 240 minutes in accordance with HACCP regulations.
