A retarder controls yeast fermentation during the proofing stage through the use of low temperatures. These refrigerated cabinets slow down the rising process therefore slow fermentation. This can lead to deeper, more complex flavours. Provers use warmer temperatures and humidity to encourage fermentation and increase activity.
